Simply taxi to your gate or parking location, set your parking brake, and turn off your engines.

If you're still on the ground, simply stop your aircraft and set the parking brake. You may now start smartCARS 3 because your aircraft is not moving. Unfortunately if you are already inflight you will need to restart your flight in order to start smartCARS 3.

Do I have to start my next flight from where I landed last?

No. You may start your next flight from any airport in the world. The only exception is if you're flying a tour that must be flown in a specific order.
